Have I mentioned?

Thank you so much for your nice comments about the race! I’m done complaining about it. I’m excited to move forward and move on!

I woke up yesterday ready to take on the world. Or, my to-do list. Have I mentioned how much I love lists? I went to Target after work to pick up a couple of things that we needed and as usual, took a detour through the dollar section. Look at the post-its I found

A to-do list and a post-it in one? I needed it. I should have bought two. Have I mentioned how much I love post-its?

I’m a sucker for office supplies in general. I saw this notebook at Urban Outfitters last summer and had to buy it for Erm.

Have I mentioned how much I love french fries?

Last night I made some carrots, which are my new roasted vegetable.

I toss them with olive oil, salt & pepper, and a bunch of chopped fresh rosemary. I also have a couple of shallots or an onion in there. I never thought of roasting carrots until I saw them somewhere online.

And today… somebody (x2) has a birthday…

Have I mentioned that I love these guys? They’re 6 today… I think. They were adopted, so we don’t know their real birthday, but this is the day I consider their birthday. They’re celebrating by sitting around and doing nothing all day. So… its just a regular day for them. I asked Erm if he got them anything and he said “Yes. A warm house to sleep in.” I’m the only one who cares about their birthday.

  3. All roasted veggies are fantastic but brussel sprouts are a food (when roasted) I am totally not sick of.

      I never thought to roast veggies because my mom never did, but now that I roast them, I’m always looking for more to try! I haven’t done cauliflower yet…

  4. My favorite roasted veggie is brussel sprouts! Carrots & parsnips come in at a close second (but they have to be done together, not separately…)

    Glad to hear I’m not the only one with a soft-spot for office supplies. I could spend HOURS in Staples just looking at all the stuff!

  5. Aw happy birthday kitties! I celebrate my cats birthday too (their actual birthday I know because I worked with the woman I got them from). I usually get them a new toy for their birthday that they never play with and give them a whole bag of kitty treats. Wow. Just typing this makes me feel like a crazy cat lady. I need a dog too.

      Ah… I’m a crazy cat lady, too. The pictures, I talk to them, wishing them a happy birthday… embarrassing.

    At Thanksgiving, l always do roasted root veggies with a pine nut pesto.

    I love lists too! There is nothing more satisfying than crossing items off of a list!

    I have been obsessed with roasted broccoli and roasted cauliflower lately. SO good!
