My coworker’s birthday was last Friday, and I like to bake for my coworkers. I am constantly throwing cookies at them. I can’t tell if this is awesome or annoying. Demi hinted that she didn’t want cake or cookies because of an upcoming trip and I thought, I can work with that! So I made these chewy oatmeal cookies that are low in saturated fat. I don’t have the nutritional information, but Betty Crocker said it, so it must be true.
Chewy Oatmeal Cookies from Betty Crocker’s Cooky Book
- 2 cups oats
- 1 cup brown sugar, packed
- 1/2 cup vegetable oil
- 2 egg whites
- 1/4 teaspoon salt
- 1/2 teaspoon almond extract
- 1/2 cup cut up dates, if desired (I omitted these)
- 1/2 cup chopped walnuts, if desired
Heat oven to 325. Stir together oats, sugar, and oil in mixing bowl. Beat egg whites until frothy and add to oat mixture. Stir in salt and almond extract. Stir in dates and walnuts. Drop mixture by teaspoonfuls on lightly oiled baking sheet. Bake about 15 minutes. Cool, remove from baking sheet. Makes about 3 dozen cookies.
The walnuts really make these cookies great, in my opinion. And while they may not be the prettiest cookies, people really love them when I make them!
In other news… my first physical therapy appointment is tonight! I’m so excited! I can’t wait to fix my hip and get more running into my life and onto this blog! I’ll let you know how it goes

Oatmeal cookies are the BEST. I appreciate that you omitted the dates. For some reason I don’t like any type of raisin and especially not in my cookie. Save the room for more oats!
Yeah, I’m really not into raisins, either. Every now and then, but for the most part, I won’t even eat oatmeal cookies with raisins in them!
