Welcome to I never knew I could do that: Chicken Soup Edition.
Erm and I have been battling colds and this weekend, the colds finally won. My worst days were Friday and Saturday, Erm’s is today. Who else has a cold out there? My mom and aunt are also feeling sick. I think its all this its-warm-then-its-cold-then-its-warm-then-its-cold-again weather. Hopefully it just stays seasonably mild now 😉
For some reason, homemade chicken soup is one of those things that I’ve always been intimidated to make. However, I’ve been learning my lesson lately (evidenced by the coconut macaroons) that there’s nothing to be afraid of with baking and cooking. I looked around and found a recipe to go off of. After all, chicken soup really is good cold medicine!
I bought a deconstructed chicken, which contained 2 wings, 2 thighs, and 2 breasts. I took the skin off of them.
Side note: I get completely grossed out by chicken, so this soup was truly a labor of love. 😀
I also cut 5 carrots, 1 onion and 4 stalks of celery in half. I put those with the chicken into a big pot and covered them with water.
And I simmered that on the stove until the chicken came off of the bone… I’d guess about 2 hours? But I can’t be too sure.
So then you have some chicken, and a pot of stock and vegetables and goopy chicken stuff.
I took the vegetables out and strained the liquid. At this point, with the addition of some noodles and seasoning, you have everything you need!
While I reheated the broth, I cut up/shredded the chicken and the vegetables and then put them back in. Once I brought the temperature back up to simmering, I put a little more than half of the package of noodles in and let them cook for 8 minutes or so. I also added some salt, Bell seasoning, and italian herb mix. The result was DELICIOUS. Almost as good as mom used to make.
Hopefully this will be the magic that rids poor Erm of his nasty cold!
